Christmas Desserts and Cocktails
Peanut Butter Snowballs
The writer, Wanda Regula, says “this recipe for peanut butter ball cookies is a nice change from the typical milk chocolate and peanut butter combination. I once prepared them for a bake sale at my granddaughter’s school, and I’ve also put them in gift boxes to share with neighbors at Christmas”. And in our opinion, these would be the perfect if you are on dessert duty for a Christmas party!
Ingredients:
- 1 cup confectioners’ sugar
- ½ cup creamy peanut butter
- 3 tablespoons butter, softened
- 1 pound white candy coating, coarsely chopped
- Chopped peanuts, optional
Directions: In a bowl, combine the sugar, peanut butter, and butter. Chill in freezer for 30 minutes or until the mixture is easy to handle. Shape into 1-in. balls and place on a waxed paper-lined baking sheet. Freeze for 30 minutes or until firm. Meanwhile, melt the candy coating in a microwave-safe bowl. Dip each ball and place on waxed paper to harden. If desired, sprinkle with chopped peanuts.
Winter Sangria
This cranberry and orange-infused sangria is just what your holiday party needs. Sangria is the perfect make-ahead cocktail to serve a crowd. The fruit-filled wine punch can be made with red or white varietals (or rosé!) and can be endlessly customized with your favorite combinations of fruits. But starting with a tried-and-true recipe, especially when new to the sangria game, is always a good idea. This wintery version calls for cranberries, apples, and oranges as well as orange liqueur and Campari. It’s festive, cheery, and 100% foolproof. Add everything to a pitcher then let it chill—really, that’s all there is to it!
Ingredients:
- 2 750-ml bottles of dry red wine
- 1 c. cranberries (thawed if frozen)
- 1 c. orange liqueur (such as Cointreau)
- 1/2 c. Campari or Aperol
- 2 oranges, thinly sliced and quartered
- 2 apples, cut into 1-inch pieces
Directions: Combine the wine, cranberries, orange liqueur, Campari or Aperol, oranges and apples in a large pitcher or punch bowl. Refrigerate the sangria for 2 to 6 hours before serving.
