This month’s recipes: Taste of Home
Annemarie Higley has a few featured recipes on the Taste of Home cooking blog/article. The theme for this article is obviously on theme with our topic: easy recipes for college students. Higley says, “Send your kid off with easy food to make in the dorm or their tiny college apartment. One-pot pastas, simple soups and 5-ingredient entrees—these recipes practically belong on a college campus”.
Muffin Tin Lasagnas
This super cute an easy snack/meal is perfect for students with poor cooking skills and tastes super yummy! The presentation of the dish speaks for itself.
1) Preheat oven to 375. In a bowl, mix egg, ricotta and 1-1/4 cups Italian cheese blend.
2) Generously grease 12 muffin cups with oil;line each with a wonton wrapper. Fill each with 1 tablespoon ricotta mixture and 1-1/2 tablespoons pasta sauce. Top each with a second wrapper, rotating corners and pressing down centers. Repeat ricotta and sauce layers. Sprinkle with remaining cheese blend.
3) Bake until cheese is melted, 20-25 minutes. If desired, sprinkle with parsley.
- 1 large egg, lightly beaten
- 1 carton (15 ounces) part-skim ricotta cheese
- 2 cups shredded Italian cheese blend, divided
- 1 tablespoon olive oil
- 24 wonton wrappers
- 1 jar (24 ounces) garden-style pasta sauce
- Minced fresh parsley, optional
Peanut Butter Oatmeal
In college we believe it is so important to start your day off right. You need protein, fiber, and vitamins! That is why we are including this oatmeal recipe in this month’s blog. It is 323 calories, 6g of fiber, and 11g of protein. Perfect breakfast to have a successful day being a brilliant college student!
1) In a small saucepan, bring water and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Transfer oatmeal to 2 bowls; in each bowl, stir half each peanut butter, honey, flaxseed, cinnamon and, if desired, apple. Serve immediately.
- 1-3/4 cups water
- 1/8 teaspoon salt
- 2 teaspoons ground flaxseed
- 1 cup old-fashioned oats
- 2 tablespoons creamy peanut butter
- 1/2 to 1 teaspoon ground cinnamon
- chopped apple, optional
- 2 tablespoons honey
